OPERATION MARMALADE: STRATEGIC CUISINE FOR CULTURAL INDIGESTION   2003

Video and cooking performance

The culinary replaces the military in this initiative for a new democracy celebrating marmalade as a collaboration of cultures. Arabs in the south of Spain grew Seville oranges too bitter to eat. They were shipped to Dundee Scotland where women used them to make marmalade, now enjoyed worldwide.
